Technique is where the art of cooking marries with science. For example, the unique chemical composition of butter allows it to form bonds with onions that olive oil does not form. Hence, when you sauté onions in butter, you will notice that the resulting mix is less oily in appearence than when onions are sautéed in olive oil alone. The use of oil in food preparation is actually important to aid in the absorption of fat soluble vitamins.
