Sweet Potato Patties

Quick and easy, the flavor of this side dish will surprise you.

1 sweet potato
½ cup pecans
½ tsp Celtic Sea Salt
1 egg

Preheat oven to 350°.
Scrub the sweet potato and cut it into large chunks. (Don't worry about peeling until later). Steam the sweet potato for roughly 10 minutes until tender.

In a food processor or blender, process the pecans until they are chopped fine (but be careful not to make pecan butter). Alternately, chop pecans by hand.

Place sweet potato pieces in a small bowl. When they are cool to the touch remove the skins. Add chopped pecans and sea salt and mix well, mashing the sweet potatoes with a whisk. Whisk in the egg. The resulting mixture should be like a thick muffin batter.

Butter a baking sheet (I use ghee). Using a tablespoon, scoop out batter and drop it on the baking sheet. Bake in the preheated oven for 15 minutes. Flip patties over with a spatula an bake for 3 more minutes.

Serve with split pea soup for a delicious and colorful dinner!
